At the Elanco Beef Consultants Forum this month I had the chance to interview Dr. Daryl Tatum, a meat scientist from Colorado State University. We had a chance to chat about some of the issues with the gap between consumers and producers with meat quality and production. Dr.Tatum addressees the issue of the industry achieving efficiencies and the consumer receiving the products they desire. There were many questions from the audience for Dr. Tatum as he discussed the future of growth technologies and the possible positive and negative affects on meat quality. Dr. Tatum was very clear that the use of growth technologies is not a food safety issue at all. I really found Dr. Tatum very interesting and informative in regards to meat quality. We also shared some great conversation about college football and his CSU Rams.
